Easy Truffle Pasta

Here's an easy truffle pasta you can whip up at home, without having to get your paws on the pricey and highly perishable funghi itself. I amp up the truffle flavour in 3 layers here - firstly by using dried pasta that's made with white truffles (See notes), secondly by adding concentrated truffle paste that's easily found in specialty stores (or online), and thirdly, by using a truffle spice seasoning that's like a truffle flavoured powder. Use any permutation of the 3, or add in some truffle butter if you wish. This is the perfect at-home indulgence this holidays!

This was my solo lunch at home cause my mum absolutely loathes the pungent and earthy scent of truffles. She finds them absolutely repulsive, like gym socks. So feel free to scale this up as you see fit...

Ingredients

  • 65g dried pasta, or truffle pasta

  • 10g unsalted butter (or truffle butter if you have it)

  • 1 Tablespoon truffle paste

  • 1/2 Tablespoon minced shallots

  • 2 Tablespoons white wine

  • 60ml heavy cream

  • truffle spice seasoning (optional)

  • Parmigiano Reggiano (to finish)

Directions

  • Bring your pasta to a boil in a pot of salted water. Cook it for less than a minute indicated on the pasta package. Reserve a couple tablespoons of the pasta cooking water, then drain and set your pasta side.
  • In a pan over low heat, add your butter and shallots, and let saute until it softens slightly. Add in your wine and let it reduce. Then go in with the heavy cream, truffle paste, and a few tablespoons of the pasta cooking water.
  • Add your pasta back in to cook. If you're using the truffle spice seasoning, add a couple of dashes. Taste and adjust for seasoning, adding more truffle paste if needed.
  • Once the sauce combines to become one with the pasta and coats it well, switch off the heat. Grate over some parmigiano reggiano (to your heart's content), and serve! Easy.

Notes

  • I got my white truffle tagliolini (Tartufi Jimmy brand) from Huber's Butchery in Singapore. I love the texture of this, it's got a nice bite and maintained integrity even after simmering in the cream sauce. The truffle spice seasoning I use is also the same brand, and can be found in Huber's!
