This hits all the right weekday spots. One pan, quick and easy (aka you can get dinner on the table ASAP when you get home), gets your protein and omega 3 boxes checked, and holds plenty of punchy flavours! The sauce is a symphony of honey, light soy, and lemon juice, which we then infuse with chilli and garlic. Sooo good and one of my current favourites...

If cooking for kidlets, just omit the chili flakes, or add more if they've been naughty >.<

Ingredients

  • 2 portions of salmon fillet (about 120g to 150g per fillet)

  • 3 garlic cloves, minced

  • 1 teaspoon chilli flakes (to taste)

  • 2 Tablespoons honey

  • 2.5 Tablespoons lemon juice

  • 1 Tablespoon light soy

  • 20g unsalted butter

  • Oil, for searing salmon

  • Salt and black pepper

Directions

  • Prep your salmon fillets by simply seasoning them with salt and black pepper. Set aside.

  • Mix the honey, lemon juice, and light soy together in a tiny bowl.

  • Get your pan heated over medium-high heat, and then drizzle in some oil. When the oil is heated up, place your salmon fillets in the pan. Allow them to sear and develop a nice colour AKA do not touch them!! Leave them alone! When you see that the fillets are about 3/4 cooked through, flip and sear the other side.

  • Then pour over your honey-soy-lemon mixture, and toss in your garlic cloves and chilli flakes. Allow the sauce to come to a simmer, and it will thicken up slightly. Finish with your unsalted butter.

  • Spoon the sauce over your salmon as it bubbles and emulsifies. Switch off the heat.

  • Plate up by carefully removing the salmon fillets and placing them on your plate. But it's also okay if they break a little. >.< Spoon the garlicky,sweet-sour-salty sauce all over the salmon fillets. To serve, squeeze a little more lemon juice over, along with a scatter of parsley flakes.
